I am looking for a knitting class for my 11-year-old.  She knows the basics, but needs to get beyond that.  Are there any knitting classes for children or anyone who works one-on-one to teach kids to knit?

I am sure there are a number of very good opportunities for your daughter to further her interest in knitting. Below find two.

During the summer I would direct you to Summer Trails Day Camp in Somers. They have an amazing day camp program and for 3rd graders on up they offer sowing and/or knitting programs depending on interest. Their staff is amazing and they work one-on-one with campers so that they really learn. Children are challenged at their level by teachers that understand how kids learn. They have been the leader in Upper Westchester for the last 35 years in creating programs that excite, entertain and educate children. You can check them out at www.summertrailsdaycamp.com.

During the winter I would offer Katonah Yarn. They are very helpful. They do children's classes as well as one-on-one sessions. You might check AC Moore or a yarn supply near your home as well.
