my daughter has celiac disease, what have your clients found as the best tasting wheat flour alternative?

My clients have enjoyed Spelt flour, Millet, and Kamut.  Your daughter still maybe sensitive to spelt flour since it is like a cousin to wheat.  Just as a side note you may want to consider a high quality probotic and enzyme to help support your daughters digestive tract of you are not doing so already.

I have many patients with Celiac, Gluten allergies. I have had great results with my nutrition and allergy programs.

Unfortuneately its an individual taste preference for them, Mrs. Green's, Trader Joe and Whole Foods have gluten free products that you will have to try with your daughter and see which she prefers.

Is she under care of an alternative Dr. ?

most of my patients with this problem use pur rye/pumpernickel,corn bread--but most celiac patients are senstive not only to wheat but to gluten which further limits the grains that they can eat-you are left with corn,rice bread which are very bland-rice pasta is not to bad-make sure wheat is the only offending food and not gluten which like i said is more expansive-in my practice most patients with this condition are not only wheat sensitive but also gluten sensitive-i can provide you with lists of gluten containing foods if you wish-you can reach me by e-mail steve.felder@verizon.net or call 914-939-3621
